Installment #55

We interrupt this week’s installment to bring you a VERY EASY – super delicious – everyone will go crazy over it – summertime dessert.

There is NO mixing, baking, stirring!! Just some unwrapping, pouring and spreading… easy-peasy!

Here’s what you need: a box of plain ol’ ice cream sandwiches (the long, rectangle ones, vanilla ice cream and chocolate wafers), a jar of caramel sauce, a tub of Cool Whip, and a bag of Heath bar brickle (or smash up your own Heath Bar candy bars… or use any other tiny candy that you prefer, let your imagination run wild).

Here’s what you do: unwrap each ice cream sandwich and wedge them into a 9x13 pan or casserole dish (use a disposable foil pan if you are going to take this to a party; that way you don’t have to worry about getting your pan back). You will probably have to cut some of the sammies in half to get the whole bottom of the 9x13 pan covered evenly. Now poke holes all around in the sammies; I use the small end of a chopstick, but you can use a fork or whatever. Next you’re going to pour the caramel sauce all over the sammies. Now spread the Cool Whip on top of that and then sprinkle the Heath bar brickle (or other candies) all over the top of the Cool Whip. DONE! You’ll probably need to put it in the freezer for a bit to get it nice and firm before cutting into it.

At some point you WILL find yourself socializing again and when you do, this masterpiece is what you will serve them… and they will just SCREAM with delight and be forever indebted to you for sharing it.
