Installment #75

We interrupt this week’s installment to bring you one of my favorite quick and easy recipes. I learned this one from an Innkeeper that catered lots of weddings. I haven’t made it in a long time, but I came across the recipe recently and it reminded me how much I loved making this AND how much everyone I served it to wanted more. Bruschetta!


1 Baguette Loaf

1 container of Bruschetta mix (found in the produce section or with fresh salsas and hummus)

1 small package of goat cheese

Olive Oil


Cut the baguette in to 1-inch slices. Place slices on large cookie sheet and lightly coat each slice with olive oil. Top each slice of bread with a spoonful of the bruschetta mix and then a dollop of goat cheese. Bake in a 375°oven for 15-18 minutes or until cheese is starting to melt. Serve warm. It’s a true crowd pleaser!


This is a stock image of bruschetta, I did NOT make this. My recipe would look similar but with the dollop of goat cheese somewhat melted on top.
